Almost Instant Black Bean Soup

List of Ingredients
- 2 Tbsp olive oil
- 1 small onion, peeled and finely chopped
- 1 medium red bell pepper, stemmed, seeded and finely chopped
- 1 small jalapeno pepper, stemmed, seeded and finely chopped
- 1 small clove garlic, peeled and minced
- 1 cup prepared salsa
- 1 (7-ounce) pkg. instant black beans
- 4 cups water
- 1/2 tsp salt
- 1 to 2 Tbsp lime juice
Instructions
- Heat the oil in a medium pot over medium heat. Add the onion, bell pepper, jalapeno and garlic. Saute 10 minutes.
- Add the salsa; cook 5 minutes.
- Add the package of black beans, water and salt. Bring to a boil, reduce the heat and simmer 10 minutes. (Stir often, as the beans will sink and stick to the bottom of the pan.) Stir in the lime juice and serve.
Makes 4 servings;
