    Baked Tortellini with Marinara and Mushrooms

    List of Ingredients


    • Vegetable cooking spray
    • 1/4 lb. cremini mushrooms
    • 1 pkg. (9 ounces) cheese tortellini, uncooked
    • 1-1/2 cups bottled marinara sauce
    • 1/2 cup water
    • 1/2 tsp dried basil
    • 1/2 tsp dried oregano
    • 1/4 tsp ground black pepper
    • 4 Tbsp grated Parmesan cheese


    Instructions


    1. Preheat oven to 350° F. Lightly spray a 9-inch-square glass baking dish with cooking spray. Trim stems from mushrooms and wipe caps with a damp paper towel. Slice thinly.

    2. In a large bowl, stir together tortellini, mushrooms, marinara, water, basil, oregano and pepper, mixing well. Transfer to the prepared pan. Cover with aluminum foil and bake 25 minutes.

    3. Remove tortellini from oven. Stir gently and sprinkle top with grated cheese. Continue to bake, uncovered, 10 minutes. Test tortellini for tenderness and bake a few minutes longer, if necessary. Let sit 5 minutes before serving.

      Makes 4 servings.
