    Broiled Cod with Chili-Lime Butter

    List of Ingredients


    • 2 Tbsp butter, softened
    • 2 tsp lime juice
    • 1/2 jalapeno pepper, seeded and minced
    • 1/4 tsp chili powder
    • 1 lb. cod fillets
    • 1/8 tsp salt
    • Freshly ground black pepper to taste
    • Lime wedges


    Instructions


    1. Cream together the butter, lime juice, jalapeno pepper and chili powder.

    2. Place the cod on a lightly oiled broiling pan, sprinkle with salt and pepper and spread with the seasoned butter.

    3. Broil the fish about 4 inches from the heat source for 12 minutes per inch of thickness, or until no longer translucent. Serve with wedges of lime.

      Makes 4 servings;
      Approximate Prep Time: 10 minutes
