    Chicken Mozzarella

    List of Ingredients


    • 1 egg
    • 1/3 cup Italian-seasoned bread crumbs
    • 2 Tbsp grated Parmesan or Romano cheese
    • 4 boneless, skinless chicken breast halves
    • 1 Tbsp olive oil
    • 1 cup tomato pasta sauce
    • 1 cup grated mozzarella cheese


    Instructions


    1. Preheat oven to 375 degrees (F). Lightly beat the egg in a bowl. Mix together the bread crumbs and Parmesan; spread on a plate. Dredge the chicken in the egg and then in the bread crumbs mixture.

    2. Heat the oil in a large skillet with an oven-proof handle over medium heat. When hot, brown the chicken 2 minutes on each side.

    3. Spoon the tomato sauce over the chicken and sprinkle the cheese on top. Bake in the oven 15 minutes, or until the chicken tests done in its thickest part.

      Makes 4 servings.



    Final Comments


    If your skillet doesn't have an oven-proof handle, transfer the chicken to a baking dish after browning, and proceed with the recipe.
