    List of Ingredients


    • 1/2 tsp salt
    • 1/8 tsp freshly ground pepper
    • 4 boneless, skinless chicken cutlets (6- to 7-oz. each)
    • 1 Tbsp plus 1 tsp olive oil, divided
    • 1/4 cup finely chopped shallots
    • 2 tsp finely chopped garlic
    • 1 tsp curry powder
    • 1 Tbsp prepared picante sauce
    • 1 cup chicken broth
    • 1 tsp finely chopped fresh parsley


    Instructions


    1. Heat oven to 350 degrees (F). Sprinkle salt and pepper evenly over chicken.

    2. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat; add chicken and brown 3 minutes per side. Transfer chicken to a jelly-roll pan or cookie sheet; bake 8 to 9 minutes (instant-read thermometer inserted into thickest part of breast should register 170 degrees F).

    3. Meanwhile, heat the remaining 1 teaspoon oil over medium-high heat in same skillet. Add shallots and garlic; cook 1 minute, stirring. Add curry and cook 10 to 20 seconds. Add picante sauce and broth; bring to a boil and cook 1 to 2 minutes more, until slightly reduced. Pour over chicken and sprinkle with parsley.

      Makes 4 servings.
