Chicken with Creamy Gravy

- 2 lbs. small red potatoes, cut into 3/4-inch chunks
- Salt
- Water
- 1 (3- to 3-1/2 lb.) chicken, cut up
- 1/2 cup chopped shallots
- 1/2 cup white wine
- 1 (10-3/4 oz.) can condensed cream of chicken soup
- 1/4 tsp freshly ground pepper
- Cooked spinach
Instructions
- Bring potatoes, 2 teaspoons salt, and enough water to cover the potatoes to boil in saucepan. Reduce heat, cover and simmer 20 minutes until tender.
- Meanwhile, heat a 12-inch nonstick skillet over medium-high heat. Add chicken, skin-side down, and cook 5 minutes, until well-browned. Turn; cook chicken 4 minutes, then push chicken to one side of the skillet. Add shallots and cook 2 minutes more. Add wine; cook for 30 seconds. Stir in soup and 1/2 cup water. Cover and simmer 20 minutes until chicken is cooked through.
- Drain potatoes; return to pot. Remove 1/4 cup gravy from skillet; mash with potatoes and 1/4 tsp salt and pepper.
Divide chicken pieces on 6 serving plates. Spoon gravy over top. Serve with the mashed potatoes and spinach.
