    Creamed Tuna

    List of Ingredients


    • 3 Tbsp butter
    • 1 small onion, diced
    • 1 cup sliced mushrooms
    • 3 Tbsp all-purpose flour
    • 2 cups milk or half-and-half, warmed
    • 1/4 cup sherry
    • Salt and pepper to taste
    • 1 can albacore tuna, packed in water, drained
    • 1/2 cup frozen green peas


    Instructions


    1. In a saucepan over medium-high heat, melt butter and add onion and mushrooms. Cook until both are tender.

    2. Stir in flour; cook and stir for 2 to 3 minutes. Slowly stir in milk until all lumps are removed.

    3. Return to heat; stir until sauce has thickened. Stir in sherry and continue to cook and stir. Season with salt and pepper; add tuna and frozen peas. Cook until peas are heated through.

      Serve over toast spears or egg noodles. Garnish with a sprinkling of chives, parsley or dill.

      Makes 2 cups.
