Crispy Chicken Tenders

- 1-1/2 lbs. chicken tenders
- 1/2 tsp salt, divided
- 1 cup buttermilk
- 1/8 tsp red pepper sauce
- 1-1/4 cups all-purpose flour
- 1/4 tsp freshly ground pepper
- 1/4 tsp paprika
- Pinch cinnamon
- 1 cup vegetable oil
- Red pepper sauce or catsup (optional)
Instructions
- Heat oven to 300 degrees (F). Sprinkle chicken with 1/4 teaspoon of the salt. Combine buttermilk and hot red pepper sauce in a large bowl. Add chicken; let stand 10 minutes.
- Meanwhile, combine the flour, the remaining 1/4 teaspoon salt, the pepper, paprika, and cinnamon in a large 1-gallon resealable plastic storage bag.
- Remove chicken from buttermilk mixture, letting excess drip. Add half the chicken to flour mixture, shaking to coat. Transfer chicken to a sheet of waxed paper. Repeat with remaining chicken.
- Heat oil in a large skillet over medium-high heat 3 to 5 minutes, until oil is very hot. Cook chicken in batches 2 to 3 minutes per side, until golden brown and cooked through. Transfer chicken to a cookie sheet; keep warm in oven. Repeat.
Serve chicken with red pepper sauce or catsup, if desired.
