Easy Chocolate Mousse

We're using raw egg whites in this recipe, so source the best eggs you can get your hands on."

◦ 8 ounces semisweet chocolate chips
◦ 4 tablespoons butter
◦ 2 cups heavy cream, cold
◦ 3 egg whites
◦ Pinch of sea salt
◦ Fresh berries, chopped nuts, shaved chocolate, or prepared whipped cream, for garnish
Recipe
Combine the chocolate chips and butter in a heatproof glass bowl. Place the bowl over a saucepan filled with water and heat the saucepan over medium heat, to indirectly melt the chocolate chips and butter together.
Meanwhile, whip the cream in a standing mixer until fluffy and stiff. Transfer the whipped cream to a bowl and place the egg whites in the mixing bowl. Add a pinch of sea salt and whip the egg whites until stiff peaks form.
Add half the melted chocolate into the whipped cream and gently (and I mean gently!) fold to combine. The goal is to maintain maximum volume, so fold it together carefully. Then fold in the other half of the chocolate. Finally, fold in the whipped egg whites, and continue folding until entirely combined. Refrigerate for 1 hour to set the mousse. Garnish with fresh fruit, chopped nuts, shaved chocolate, additional whipped cream, or whatever your little heart desires.
