    Fresh Mushroom Soup

    List of Ingredients


    • 1 lb. mushrooms, cleaned and sliced
    • 6 Tbsp butter
    • 1 onion, finely chopped
    • 1/2 tsp sugar
    • 3 Tbsp flour
    • 3 cups chicken broth
    • 1/2 cup dry vermouth
    • 2 Tbsp fresh parsley, chopped or snipped


    Instructions


    1. Melt butter in saucepan. Saute onions sprinkled with sugar until golden. Add mushrooms and stir for a few minutes. Sprinkle with the flour and cook for a few minutes.

    2. Add chicken broth, stirring until slightly thickened. Just before serving, stir in Vermouth and heat until steaming hot. Garnish each bowl with parsley.

      Makes 4 to 6 servings.
