    Hoisin-Glazed Meatloaf

    "The down-home goodness of meatloaf makes everybody happy, but whether you pack it into a loaf pan or shape it free-form on a baking sheet, it takes a long time to bake because of its sheer size. The solution to getting meatloaf on the table in less than an hour is simple: Shrink it down to individual-size portions. To change up the classic flavor profile, these mini loaves use ground pork and incorporate Chinese-inspired ingredients (think soy sauce, scallions, ginger, and garlic) for a modern yet still homey take on this comfort-food favorite. A couple egg yolks keep it supermoist, and panko bread crumbs lighten the texture. Shape the mixture into free-form loaves, brown them in a skillet, and then finish them in the oven in the same skillet. Brush the little loaves with a mixture of hoisin sauce and a splash of tangy rice vinegar for an umami-packed glazed exterior."

    List of Ingredients

    â—¦ ¼ cup hoisin sauce
    â—¦ 2 tablespoons rice vinegar
    â—¦ 6 tablespoons panko bread crumbs
    â—¦ 4 scallions, sliced thin, divided
    â—¦ 2 tablespoons soy sauce
    â—¦ 2 large egg yolks
    â—¦ 1 tablespoon grated fresh ginger or ½ teaspoon ground ginger
    â—¦ 2 cloves garlic, minced
    â—¦ 12 ounces ground pork
    â—¦ 1 teaspoon vegetable oil

    Recipe

    Adjust oven rack to middle position and heat oven to 350 degrees. Whisk hoisin and vinegar together in small bowl; set aside.

    Combine panko, half of scallions, soy sauce, egg yolks, ginger, and garlic in medium bowl. Add pork and gently knead with your hands until just combined. Shape mixture into two rough 5 by 3-inch loaves of even thickness.

    Heat oil in 12-inch ovensafe nonstick skillet over medium-high heat until just smoking. Gently add meatloaves and cook on first side until well browned, 2 to 3 minutes. Carefully flip meatloaves, neatening edges as needed, and transfer skillet to oven. Bake for 10 minutes.

    Remove skillet from oven. Being careful of hot skillet handle, brush top and sides of meatloaves with reserved hoisin mixture. Return skillet to oven and continue to bake until meatloaves register 160 degrees, 5 to 10 minutes. Transfer meatloaves to plate and let rest for 5 minutes. Sprinkle with remaining scallions and serve.
