Macaroni & Cheese Chowder

List of Ingredients
- 1 Tbsp butter (or margarine)
- 1/4 lb. smoked ham, diced
- 1 cup chopped onions
- 1 pkg. (12-oz.) Stouffer's frozen macaroni & cheese
- 1 (14-1/2 oz.) can chicken broth
- 1 (14-3/4 oz.) can creamed-style corn
- 1 cup milk
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 1/2 lb. boneless, skinless chicken breast, diced
- Fresh chives for garnish, optional
- Crusty bread, optional
Instructions
- Heat butter in a large saucepan over medium heat. Add ham and onions. Cook for 5 minutes, stirring occasionally, until onions are softened and ham is lightly browned. Meanwhile, microwave the frozen macaroni & cheese according to package directions.
- Add macaroni & cheese, broth, corn, milk, salt and pepper to ham mixture. Bring to a boil. Stir in chicken; reduce heat. Cover and simmer for 3 to 4 minutes, until chicken is cooked through.
Garnish with fresh chives and serve with crusty bread, if desired.
Makes 4 servings.
