    One-Pan Mac 'n' Cheese

    List of Ingredients


    • 8 ounces (2 cups) elbow macaroni
    • 1 Tbsp all-purpose flour
    • 3/4 to 1 cup milk, divided
    • 1/2 tsp salt
    • 1/4 tsp ground black pepper
    • 2 cups grated sharp Cheddar cheese
    • .
    • 2 Tbsp crumbled blue cheese (optional)
    • 1 can (4 ounces) chopped green chilies, drained (optional)


    Instructions


    1. Cook macaroni according to package directions. Drain pasta.

    2. Make a paste of flour and 2 tablespoons milk. Whisk 1/2 cup plus 2 tablespoons milk into flour mixture and pour into macaroni cooking pot; bring to a simmer. Whisk in salt and pepper. Simmer 2 minutes, just until lightly thickened.

    3. Pour macaroni back into pan and place over medium-low heat, mixing well. Add Cheddar cheese and optional blue cheese and green chilies. Stir until cheese is melted and macaroni is coated. Add a little more milk, if needed. Heat through and serve immediately.

      Makes 4 servings.
