    One-Sided Cooked Salmon

    List of Ingredients


    • 2 Tbsp flour
    • 1 tsp salt, divided
    • 1/4 tsp freshly ground pepper
    • 1-1/4 lbs. center-cut salmon fillet, cut crosswise into 4 pieces
    • 1 Tbsp olive oil
    • 2 Tbsp chopped fresh dill


    Instructions


    1. Combine flour, 1/2 teaspoon of the salt and the pepper on waxed paper. Dip each piece of salmon, skin-side down, into flour mixture; shake off excess. Set aside on waxed paper. Sprinkle pieces evenly with the remaining 1/2 teaspoon salt; set aside.

    2. Heat a heavy large skillet over high heat 1 minute. Reduce heat to medium-high; add oil and heat 1 minute more. Add salmon pieces, skin side down. Cover and cook 5 to 6 minutes, until cooked through. Sprinkle with dill.

      Makes 4 servings.
