Parmesan Breaded Chicken

List of Ingredients
- 4 skinless and boneless chicken breasts
- 2 cups bread crumbs
- 2 Tbsp Parmesan cheese
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp salt
- Freshly ground black pepper to taste
- 3 Tbsp flour
- 1 egg, lightly beaten
- 2 Tbsp olive oil
Instructions
- Place the chicken between sheets of plastic wrap and pound down to about 1/4-inch thickness.
- Combine the bread crumbs, Parmesan, oregano, basil, salt and pepper; spread on a plate. Dredge the chicken in the flour, then in egg, and finally in seasoned bread crumbs.
- In a large nonstick skillet, heat olive oil over medium heat. Sauté the chicken breasts for about 2 to 3 minutes per side, or until the chicken is cooked through.
Makes 4 servings.

To make a caper-lemon sauce to go with the chicken: Remove the chicken from the pan and add 1 tablespoon lemon juice and 2 tablespoons butter or margarine. Swirl to mix. Stir in 1 tablespoon rinsed and drained capers. Spoon a little over each piece of chicken.
