    Quick Chicken and Wild Rice Soup

    Recipe Introduction

    "My mother-in-law raves about the chicken and rice soup I serve at our house. I tweaked the recipe several times to get it just right."

    List of Ingredients

    â—¦ 1 package (6.2-ounce) fast-cooking long grain and wild rice mix
    â—¦ 2 tablespoons butter
    â—¦ 1 small onion, finely chopped
    â—¦ 1 celery rib, finely chopped
    â—¦ 1 medium carrot, finely chopped
    â—¦ 1 clove garlic, minced
    â—¦ 2 tablespoons all-purpose flour
    â—¦ 3 cups 2% milk
    â—¦ 1 ½ cups chicken broth
    â—¦ 2 cups cubed cooked chicken

    Recipe

    Cook the rice mix according to the package directions.

    Meanwhile, in a large saucepan, heat butter over medium-high heat. Add onion, celery, and carrot; cook and stir until tender, 6 to 8 minutes. Add the garlic; cook one minute longer. Stir in flour until blended; gradually whisk in the milk and broth. Bring to a boil, stirring constantly; cook and stir until slightly thickened, 1 to 2 minutes.

    Stir in the chicken and the rice mixture; heat through.

    Makes 4 servings
