    Quick Tuna Noodle Casserole

    Adapted from a recipe from Ann Lovejoy


    List of Ingredients


    • 2-1/2 cups egg noodles
    • 1 tsp olive oil
    • 4 medium green onions, finely chopped
    • 1 (6-1/2-ounce) can water-packed tuna, drained and flaked
    • 1/4 cup sour cream or yogurt
    • 1/4 cup light mayonnaise
    • 1 Tbsp capers
    • 3/4 tsp dried dill, crushed
    • 2 tsp lime juice
    • 1/8 tsp salt
    • Freshly ground black pepper to taste


    Instructions


    1. Bring a pan of water to a boil, add the egg noodles and time according to package directions.

    2. While the noodles are cooking, heat the olive oil in a skillet set over medium heat. Add the green onions and saute 1 minute. Remove from the heat and stir in the tuna, sour cream, light mayonnaise, capers and dill.

    3. Drain the noodles. Add to the sour cream mixture in the pan, stirring to coat well. Stir in the lime juice, salt and pepper. Spoon into a small casserole dish and broil about 4 inches from the heat source until the top just starts to bubble. Serve immediately.

      Makes 3 servings;
      Approximate Prep Time: 20 minutes
