    Red Pepper French-Bread Pizzas

    Adapted from Dinner in Minutes


    List of Ingredients


    • 1 Tbsp olive oil
    • 1 small onion, halved and thinly sliced
    • 2 medium red bell peppers, halved, seeded and thinly sliced
    • 1 medium clove garlic, peeled and minced
    • 8 black olives, either domestic or imported, pitted and coarsely chopped
    • 1 Tbsp balsamic vinegar
    • Freshly ground black pepper to taste
    • 1/4 cup finely chopped parsley
    • 2 French rolls, 6 inches long, halved
    • 1/2 cup shredded low-fat mozzarella cheese
    • 2 Tbsp grated Parmesan cheese


    Instructions


    1. Preheat oven to 375 degrees (F). Heat the olive oil in a skillet set over medium heat. Add the onion and saute 3 minutes. Add the bell peppers and garlic; saute 5 minutes.

    2. Add the vinegar, olives, several grindings black pepper and parsley, stirring to blend. Cook 2 minutes.

    3. Put the French bread halves on a baking sheet, cut side up. Spoon the peppers on top and sprinkle with the mozzarella and Parmesan. Bake 10 minutes. Put under a hot broiler briefly to brown the tops lightly, and serve.

      Makes 4 pieces.
