    Salmon in Pepper

    From "Gourmet's In Short Order"


    List of Ingredients


    • 1 Tbsp soy sauce
    • 1 Tbsp lemon juice
    • 1 clove garlic, peeled and forced through a press
    • 1 tsp sugar
    • 1-1/3 lbs. salmon fillet
    • 1 tsp olive oil
    • 1-1/2 tsp coarsely ground black pepper
    • Lemon wedges


    Instructions


    1. Combine the soy sauce, lemon juice, garlic and sugar. Place the salmon in a glass dish and pour the marinade over. Refrigerate 30 minutes, or up to 2 hours.

    2. Place the salmon in a foil-lined baking pan and rub the olive oil onto it. Sprinkle with the pepper.

    3. Bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until the salmon tests done and reaches an internal temperature of 140 degrees. Serve with lemon wedges.

      Makes 4 servings;
