    Salsa-Braised Halibut

    Adapted from "The 15-Minute Chef" by Patricia Mack


    List of Ingredients


    • 1 Tbsp vegetable or light olive oil
    • 1/4 cup minced shallots
    • 1 cup thinly sliced red bell pepper
    • 1-3/4 cups bottled salsa (mild or medium-strength)
    • 1 Tbsp lime juice
    • 1-1/3 lbs. fresh halibut fillet, cut into 4 serving pieces
    • 1/8 tsp salt
    • Freshly ground black pepper to taste
    • Lime wedges


    Instructions


    1. In a large (10- to 12-inch) nonstick skillet, heat oil over medium heat. Add shallots and bell pepper; sauté 5 minutes. (Add a tablespoon of water if the vegetables begin to stick.) Stir in salsa and lime juice; bring to a simmer.

    2. Lay the halibut in the pan and sprinkle with salt and pepper. Spoon some of the sauce over the fish. Cover and cook 3 minutes. Turn fish over and continue cooking a total of 12 minutes per inch of thickness, or until fish just starts to flake.

    3. Transfer halibut to plates. Spoon salsa on top and serve with wedges of lime.

      Makes 4 servings.
