    Seared Salmon with Balsamic Glaze

    â—¦ ¼ cup balsamic vinegar
    â—¦ ¼ cup orange juice
    â—¦ 2 tablespoons honey
    â—¦ â…› teaspoon red pepper flakes
    â—¦ 1 sprig fresh rosemary
    â—¦ 2 teaspoons vegetable oil
    â—¦ 4 skin-on salmon fillets (about 6 ounces each), 1 ¼ inches thick
    â—¦ Salt and pepper
    â—¦ 2 tablespoons unsalted butter

    Recipe

    Whisk vinegar, orange juice, honey, and pepper flakes together in bowl. Add rosemary sprig and set aside.

    Heat oil in large nonstick skillet over medium-high heat until just smoking. Pat salmon dry with paper towels, season with salt and pepper, and cook, skin side up and without moving fish, until well browned, 4 to 5 minutes. Flip fish skin side down and cook until all but very center of fish is opaque, 2 to 3 minutes. Transfer to platter and tent with foil.

    Wipe out skillet with paper towels and lower heat to medium. Carefully pour balsamic mixture into pan (it will splatter). Simmer until thick and syrupy, about 5 minutes. Remove rosemary. Off heat, whisk in butter and season with salt and pepper. Pour glaze over salmon and serve.

    Serves 4
