    Sesame-Crusted Salmon with Honey-Soy Dressing

    Recipe Introduction

    "Sesame seeds make almost anything taste better. Especially when they're toasted and used in as prominent a way as they are here. I coat the salmon in a pretty mix of black and white sesame seeds and then pan-sear the fillets, keeping the skin on—doing so adds nice flavor and keeps the salmon from drying out. I know you might prefer skinless salmon, but I encourage you to try it my way. See if you like the results better—I think you just might. As the salmon cooks, the fat from the skin releases into the pan, and once the fillets are flipped, the sesame seeds slowly toast in the omega-3-rich fat. You don't want to waste all those healthy fats and delicious flavor, right?"

    List of Ingredients

    â—¦ ¼ cup low-sodium soy sauce
    â—¦ 3 tablespoons honey
    â—¦ 1 (1-inch) piece of fresh ginger, peeled and grated
    â—¦ 2 teaspoons orange zest
    â—¦ 2 teaspoons chili sauce
    â—¦ ¼ cup white sesame seeds
    â—¦ ¼ cup black sesame seeds
    â—¦ 4 (6- to 8-ounce) skin-on salmon fillets
    â—¦ 1 egg white
    â—¦ 3 tablespoons sesame oil

    Recipe

    In a small bowl, whisk together the soy sauce, 2 tablespoons honey, the ginger, orange zest, and chili sauce.

    In a separate small bowl, combine the white and black sesame seeds. Place the salmon on a large plate and brush the top of each fillet with egg white, then coat with the sesame seed mixture.

    In a large skillet, heat the sesame oil over medium heat. When the oil shimmers, place the salmon in the skillet, sesame-seed side down. Cook until the sesame seeds are fragrant and toasted, 2 to 3 minutes. If the sesame seeds begin browning too quickly, reduce the heat to low. Carefully flip each fillet and cook until the salmon is crisp, 2 to 3 minutes more. During the last minute of cooking, drizzle the top of the salmon with the remaining 1 tablespoon of honey. Remove the pan from the heat. Transfer the salmon to four plates and serve warm, with the soy dressing drizzled over the top.
