    Smoked Salmon Boboli

    Adapted from "Little Meals"


    List of Ingredients


    • 1/2 cup light cream cheese
    • 2 Tbsp plain lowfat yogurt
    • 3/4 tsp dried dill
    • 2 (7-inch) Boboli breads
    • 1/4 cup paper-thin slices red onion
    • 1/4 lb. smoked salmon or lox
    • 1 cup grated lowfat mozzarella cheese


    Instructions


    1. Cream together the cream cheese, yogurt and dill. Spread on the Boboli and place on a baking sheet.

    2. Arrange the red onion slices on the breads, followed by the smoked salmon. Sprinkle with the mozzarella.

    3. Bake in a preheated 450-degree (F) oven 5 minutes. Place the breads under a hot broiler until the cheese is golden. Cool a few minutes before cutting into wedges and serving.

      Makes 2 to 4 servings.
