    Thai Curry Noodle Pot

    Recipe Introduction

    "We did a GOOP story with Jasmine and Melissa Hemsley and fell in love with their ingenious noodle pot idea: put a bunch of fresh ingredients and seasonings in a Mason jar, and when you get to work (or wherever) simply top off with boiling water for an instant, healthy soup on the go. We love the flavors of tortilla soup and Thai curry, which inspired our two versions."

    List of Ingredients

    â—¦ ½ teaspoon Thai red curry paste
    â—¦ 1 teaspoon coconut oil
    â—¦ 1 tablespoon tamari
    â—¦ 2 tablespoons coconut milk
    â—¦ ½ teaspoon finely grated or very finely minced fresh ginger
    â—¦ 2 tablespoons thinly sliced snow peas
    â—¦ 1 shiitake mushroom, thinly sliced
    â—¦ 1 tablespoon minced shallot
    â—¦ â…“ cup cooked soba noodles
    â—¦ 1 tablespoon chopped fresh cilantro
    â—¦ 1 tablespoon chopped fresh basil
    â—¦ ¼ lime

    Recipe

    Place the red curry paste, coconut oil, tamari, and coconut milk in the bottom of a medium Mason jar. Add the ginger, snow peas, mushroom, shallot, and soba noodles, top with the cilantro, basil, and lime wedge, and store in the fridge until ready to eat.

    When ready to eat, remove the lime wedge, fill the jar with boiling water, cover, and let sit for 5 minutes. Uncover, squeeze in the juice from the lime wedge, and stir well, making sure that the curry paste has fully dissolved before digging in.

    Serves 1
