    White Cheddar Tomato Bisque

    Adapted from "The Soup Mix Gourmet"


    List of Ingredients


    • Two 11-ounce cans condensed tomato bisque
    • 1 pint fat-free half-and-half
    • 1/2 cup water
    • 1/8 tsp cayenne pepper
    • 1/8 tsp salt
    • 1/8 tsp ground black pepper
    • 2 Tbsp lemon juice
    • Optional: 1 tsp fresh thyme leaves
    • 2 cups (4 ounces) coarsely grated sharp white Cheddar cheese
    • 1 cup packaged herb- or garlic-flavored croutons


    Instructions


    1. Pour the condensed tomato bisque into a 3-quart saucepan and add the half-and-half, water, cayenne, salt and pepper, whisking until smooth. Heat the soup over medium heat until hot. (Don't let the soup come to a boil.)

    2. Reduce the heat to medium-low. Stir in the lemon juice, optional fresh thyme and the the Cheddar. Stir until the cheese is melted and the soup is smooth.

      Garnish each serving with a few croutons and serve.

      Makes 4 to 6 servings.
