    Wok Chicken with Herbs

    Fast Wok (Carpenter & Sandison)


    List of Ingredients


    • 1 lb. boneless, skinless chicken breast meat
    • All-Purpose Chinese Marinade (recipe follows) or your favorite wok marinade
    • 2 Tbsp cooking oil
    • 1/4 cup cilantro sprigs, mint leaves OR small basil leaves
    • Assorted salad greens lightly dressed with oil and vinegar
    • *
    • -- For Chinese Marinade --
    • 1 Tbsp dark soy sauce
    • 1 Tbsp hoisin sauce
    • 1 Tbsp dry sherry or Chinese rice wine
    • 1 Tbsp dark sesame oil
    • Several grinds of black pepper or up to 1 tsp Asian chile sauce


    Instructions


    1. Make marinade by combining all marinade ingredients and mixing well.

    2. Cut chicken into 1/4 x 1-inch rectangles. Place chicken in a bowl and add the marinade. Mix well, cover and refrigerate until 5 minutes before cooking.

    3. Place a wok over high heat. When wok is very hot, add cooking oil quickly and quickly roll around bottom one-third of wok. When oil is hot, carefully add chicken and stir and toss until it is mostly opaque, about 2 minutes. Stir in the cilantro.

      To serve: Place mixture atop the salad greens on dinner plates. Serve at once.

      Makes 2 to 4 servings.
