Black Bean Salsa

List of Ingredients
- 1 ripe mango, peeled and diced
- 1/4 red bell pepper, diced
- 1/4 green bell pepper, diced
- 1/4 red onion, diced
- 1/2 cup canned black beans
- 1/3 cup pineapple juice
- Juice of 2 limes
- 1/4 cup chopped cilantro
- 1 Tbsp ground cumin
- 1/2 Tbsp minced green chile pepper
- Salt and pepper to taste
Instructions
- Combine the mango, peppers, onion, black beans, juices, cilantro, cumin, and chile pepper in a bowl. Season with salt and pepper. Chill, covered, for up to 5 days.
Serve with tortilla chips.
Yield: 2 to 3 servings
