Blazin' Hot Green Salsa

List of Ingredients
- 1/2 lb. tomatillos, about 8 small ones, papery husks removed
- 1 to 2 jalapeno peppers, to taste
- 2 cloves garlic, crushed
- Juice of 1 lime (about 1/4 cup)
- 2 green onions (white and 3 inches of green), sliced
- 1/4 tsp sugar
- 1/8 tsp ground chipotle pepper
- 1 pinch of salt, or to taste
Instructions
- Wash off sticky residue on tomatillos with warm water, then skewer them. On another skewer, thread jalapenos lengthwise.
- Grill tomatillos until their color slightly changes and their skins are about to split. Grill jalapenos until skin is charred, blistered, and starting to peel away. Immediately place jalapenos in a plastic bag and seal; let sit for 10 minutes. Wearing gloves, peel off jalapeno skins; then halve lengthwise and remove seeds.
- Puree jalapenos, tomatillos, garlic, lime juice, green onions, sugar, chipotle pepper and salt in a food processor. Serve chilled.
Makes 8 servings.
