    Blazin' Hot Green Salsa

    List of Ingredients


    • 1/2 lb. tomatillos, about 8 small ones, papery husks removed
    • 1 to 2 jalapeno peppers, to taste
    • 2 cloves garlic, crushed
    • Juice of 1 lime (about 1/4 cup)
    • 2 green onions (white and 3 inches of green), sliced
    • 1/4 tsp sugar
    • 1/8 tsp ground chipotle pepper
    • 1 pinch of salt, or to taste


    Instructions


    1. Wash off sticky residue on tomatillos with warm water, then skewer them. On another skewer, thread jalapenos lengthwise.

    2. Grill tomatillos until their color slightly changes and their skins are about to split. Grill jalapenos until skin is charred, blistered, and starting to peel away. Immediately place jalapenos in a plastic bag and seal; let sit for 10 minutes. Wearing gloves, peel off jalapeno skins; then halve lengthwise and remove seeds.

    3. Puree jalapenos, tomatillos, garlic, lime juice, green onions, sugar, chipotle pepper and salt in a food processor. Serve chilled.

      Makes 8 servings.
