    Cibolo Salsa

    List of Ingredients


    • 12 plum tomatoes
    • 6 jalapeno peppers
    • 1 medium onion, cut into quarters
    • 3 garlic cloves
    • 1 bunch cilantro
    • 2 limes, juiced
    • Salt and pepper to taste

    • Tortilla chips


    Instructions


    1. Place tomatoes, peppers, onion, and garlic in a pot. Cover with water and poach for 15 minutes or until peppers are just soft. Drain and pour into a food processor. When cool, add cilantro and pulse to chop. Add lime juice, salt, and pepper to taste.

      Serve with tortilla chips.

      Makes 2 cups.
