Cibolo Salsa

List of Ingredients
- 12 plum tomatoes
- 6 jalapeno peppers
- 1 medium onion, cut into quarters
- 3 garlic cloves
- 1 bunch cilantro
- 2 limes, juiced
- Salt and pepper to taste

- Tortilla chips
Instructions
- Place tomatoes, peppers, onion, and garlic in a pot. Cover with water and poach for 15 minutes or until peppers are just soft. Drain and pour into a food processor. When cool, add cilantro and pulse to chop. Add lime juice, salt, and pepper to taste.
Serve with tortilla chips.
Makes 2 cups.
