    Green Tomato Relish

    List of Ingredients


    • 1½ pounds green tomatoes, quartered, seeded, and thinly sliced
    • 1 red bell pepper, thinly sliced
    • 1 poblano chile, thinly sliced
    • 1 large white onion, sliced
    • 1 cup matchstick carrots
    • ½ cup water
    • 2 cups distilled white vinegar (5% acidity)
    • 1 cup granulated sugar
    • 1 Tbsp kosher salt
    • 1 Tbsp mustard seeds
    • ¼ tsp ground turmeric
    • â…› tsp ground cloves
    • â…› tsp ground allspice


    Instructions


    1. Bring the tomatoes, peppers, onion, carrots, ½ cup water, and 1 cup vinegar to a boil in a large stockpot over high; reduce the heat to medium-low and simmer, stirring occasionally, 30 minutes. Drain.

    2. Return the vegetables to the stockpot, and stir in the sugar, salt, mustard seeds, turmeric, cloves, allspice, and remaining 1 cup vinegar. Bring to a boil over medium-high heat; reduce the heat to medium-low, and simmer 5 minutes. Cool completely.

    3. Transfer to a jar; screw on the lid, and chill 30 minutes. Store in the refrigerator up to 1 week.

      Serves 8
