Mediterranean Salsa

List of Ingredients
- 1-1/2 cups (1/4-inch) diced tomatoes
- 1/4 cup chopped Kalamata olives
- 1/4 cup finely diced white onions
- 1 Tbsp extra-virgin olive oil
- 2 tsp balsamic vinegar
- 1 tsp very finely minced garlic
- 1-1/2 Tbsp finely chopped fresh basil
- 1/8 tsp salt
- 1/4 tsp crushed red chili flakes (more or less, to taste)
Instructions
- In a small bowl, mix all ingredients together (not more than one hour before serving).
Makes about 2 cups.

Chef's Note: For a super colorful salsa, use a mixture of yellow and red tomatoes when in season.
