List of Ingredients
- 2 tomatoes, finely diced
- 1/2 red onion, finely diced
- 1/2 cup tomato juice
- 1 Tbsp minced chipotle pepper
- 1 clove garlic, crushed
- 1/4 cup chopped cilantro
- Juice of 2 limes
- Salt and pepper to taste
Instructions
- Combine the tomatoes, onion, tomato juice, chipotle pepper, garlic, cilantro, and lime juice in a bowl. Season with salt and pepper. Chill, covered, for up to 6 days.
Serve with fresh corn tortillas.
Yield: About 2 cups
