Seven-Ingredient Salsa

- 3 large ripe tomatoes
- 3 green or red jalapeno peppers and 2 serrano peppers
- 4 cloves garlic
- 1 bunch cilantro
- 1/2 medium yellow onion
- 2 Tbsp fresh squeezed lime juice (1/2 large lime)
- Pinch of salt
Instructions
- Start by washing the tomatoes, peppers, cilantro, and lime very well. As you prepare each item, toss it into a medium-size bowl. Quarter and seed the tomatoes (you don't need to peel them). Dice the tomatoes into small (1/4-inch) pieces.
- Shake and drain the washed cilantro (it should be clean and dry). Chop the cilantro very finely.
- Peel and mince the garlic very finely. Peel and dice the onion into small (1/4-inch) pieces. Seed the peppers with a sharp knife (use rubber gloves when handling peppers). Discard the seeds and dice the peppers into very small (1/8-inch) pieces.
- Squeeze the lime and sprinkle the juice over the other ingredients. (You can get the most out of a lime by putting it into a microwave for 10 seconds, then rolling it back and forth on the countertop, under a slight bit of pressure. These two steps burst the juice reservoirs in the lime and can deliver up to twice as much juice as just cutting and squeezing will.)
- Top with a pinch of salt. Stir well. You can use the salsa immediately, or let it sit in the refrigerator for up to 2 days.
