    Brown Rice and Carrot Pilaf

    From "Sunset Vegetarian Cookbook"


    List of Ingredients


    • 3 Tbsp butter
    • 1 large onion, finely chopped
    • 1 cup coarsely shredded carrots
    • 1 cup long-grain brown rice
    • 2-1/2 cups vegetable stock
    • 1/2 tsp salt
    • 1/2 cup chopped parsley
    • 2 cups bean sprouts (optional)


    Instructions


    1. Melt butter in a 2-quart pan over medium-high heat. Add onion and carrots and cook until onion is soft (about 5 minutes).

    2. Stir in rice; continue to cook, stirring, until rice begins to brown slightly. Add stock and salt; cover and simmer until rice is tender and liquid is absorbed (about 45 minutes).

    3. Stir in the parsley and sprouts, if used, just before serving.

      Makes 6 servings.
