Yellow Rice

Recipe Introduction
"Yellow rice gets its color from the spice turmeric, which is very good for you — it has anti-inflammatory and antioxidant qualities. The color makes me feel very tropical! To make this vegetarian, just use vegetable stock instead of chicken stock. Serve with crispy roast chicken."
List of Ingredients
â—¦ 1 tablespoon butter
â—¦ 1 tablespoon extra-virgin olive oil
â—¦ 1 tablespoon onion powder
â—¦ 1 teaspoon garlic powder
â—¦ 1 teaspoon ground turmeric
â—¦ 1 cup long-grain rice or basmati rice
â—¦ ½ teaspoon salt
â—¦ 2 cups chicken stock, store-bought or homemade
Recipe
In a saucepan, melt the butter in the oil over medium heat.
Add the onion powder, garlic powder, and turmeric and cook briefly until foaming.
Add the rice and salt and stir to coat the rice with the spices. Add the stock and bring to a boil.
Cover, reduce the heat to low, and simmer for 15 to 20 minutes, until the liquid has been absorbed and the rice is tender. Fluff with a fork and serve.
