"In my years, I've learned that creamy, tangy slaw is always a good idea. It makes a refreshing salad at a picnic or cookout, served on or alongside pulled pork, sloppy Joes, casual sandwiches, shrimp tacos, and more! It has saved my neck several times when I needed an inexpensive, quick something to help stretch a barbecue meal for a crowd. (Slaw saved the day in the summer of 2016, when we fed 60 college students who were serving as summer camp counselors!) It's truly perfect any time!"
List of Ingredients
â—¦ ½ head red cabbage
â—¦ ½ head green cabbage
â—¦ 1 seedless English cucumber, peeled and cut into matchsticks
â—¦ 1 ½ cups mayonnaise
â—¦ ½ cup apple cider vinegar
â—¦ ¼ cup honey
â—¦ Juice of 1 lime
â—¦ 1 teaspoon sugar
â—¦ ½ teaspoon salt
Recipe
Using a mandoline, food processor, or your best knife skills, shred the cabbages. Toss the cabbage and cucumber in a large bowl. In a small bowl, whisk together the mayonnaise, vinegar, honey, lime juice, sugar, and salt. Taste and adjust the seasonings as needed. Pour over the cabbage mixture and toss well. Serve immediately, or cover and chill for up to 30 minutes before serving.
