Basic Vinaigrette

"This is a basic salad dressing that is known by many names. Some might simply call it oil and vinegar dressing because oil and vinegar are the main ingredients. Others might call it Italian dressing — which is a variation that follows."

â—¦ 2 tablespoons red wine vinegar
â—¦ ½ teaspoon minced garlic or shallot
â—¦ 1 teaspoon Dijon mustard
â—¦ 6 tablespoons olive oil
â—¦ Salt and pepper
Recipe
Whisk together the vinegar, garlic, and mustard in a small bowl.
Slowly whisk in the oil until the dressing is smooth. Season to taste with salt and pepper.
Refrigerate in an airtight container for up to 2 weeks.
Let the dressing come to room temperature before serving.
Makes about 1 cup
Italian Dressing:

â—¦ 1 teaspoon dried oregano
