    Blue Cheese Dressing II

    Recipe Introduction

    "At one point, everything that didn't have French dressing on it was covered with blue cheese dressing. This is my favorite version: tangy, not too thick, and with an interesting crunch from the walnuts."

    List of Ingredients

    â—¦ ½ cup mayonnaise
    â—¦ ½ cup sour cream
    â—¦ ¼ cup milk
    â—¦ ¼ teaspoon minced garlic
    â—¦ 2 teaspoons red wine vinegar
    â—¦ 6 to 8 tablespoons crumbled blue cheese
    â—¦ Couple shakes cayenne pepper
    â—¦ Freshly ground black pepper to taste
    â—¦ Heaping ¼ cup coarsely chopped toasted walnuts

    Recipe

    Whisk together the mayonnaise, sour cream, and milk until well blended. Stir in the garlic and vinegar.

    Add the blue cheese and stir well to mix thoroughly.
    Season with the cayenne and pepper and stir in the walnuts.

    Makes 6 to 8 servings for a salad of romaine,

    • Help Note:
    Depending on how intense you want the blue cheese flavor, you can use the so-called sweet Gorgonzola, which is much gentler than regular Gorgonzola. Bleu de Bresse and Maytag Blue are similar to Gorgonzola, as is Roquefort. Stilton is milder than Roquefort.
