Captain's Salad

List of Ingredients
- 1 quart lettuce
- 1 quart fresh spinach
- 1/2 cup small sweet onion rings
- 3 Tbsp sesame seeds, toasted
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 tsp dry mustard
- 3 Tbsp vinegar
- 3 Tbsp honey
- 1/2 cup vegetable oil
- 3 tomatoes, peeled and cut
- 2 cups herb-seasoned croutons
Instructions
- Trim and wash greens, and tear into bite-size pieces. Add onion rings and sesame seeds. Toss and refrigerate until time to serve.
- Combine salt, pepper, and mustard in small bowl. Stir in vinegar and honey and slowly add oil while beating with mixer or rotary beater. Refrigerate.
- When ready to serve, toss greens, tomatoes, and croutons with the chilled salad dressing.
Makes 8 to 10 servings.
