    Chef's Salad

    From "The Good Home Cookbook" by Richard Perry

    Recipe Introduction

    "Who is the anonymous chef who invented this salad? The answer is apparently lost, but it is likely that the salad is meant to use up leftovers, just as the equally popular Cobb salad does. You can choose to use whatever salad dressing you like best: Russian dressing, Catalina dressing, and Thousand Island dressing are particularly good choices. This is a composed salad, so take time with the arrangement of the ingredients."

    List of Ingredients

    â—¦ 10 cups torn salad greens, such as an assortment of romaine lettuce, Boston lettuce, and tender young spinach
    â—¦ ¾ cup salad dressing of choice
    â—¦ 4 ounces cooked turkey breast, cut into long, thin strips
    â—¦ 4 ounces cooked ham, cut into long, thin strips
    â—¦ 4 ounces Swiss cheese, cut into long, thin strips
    â—¦ 2 medium tomatoes, seeded and cut into wedges
    â—¦ 2 large eggs, hard-boiled, peeled, and cut into wedges
    â—¦ 12 pitted black olives

    Recipe

    In a large salad bowl, combine the greens with the dressing and toss lightly with two forks.

    Arrange the turkey, ham, and cheese in a decorative fashion on top of the greens, like spokes on a wheel.

    Around the edges, arrange the tomatoes, eggs, and olives. Serve immediately.


    Serves 4 to 6
