    Creamed Blue Cheese Dressing

    Recipe Introduction

    "This dressing reminds me (almost) of a fancy version of buttermilk ranch. It has tartness from the buttermilk and lemon zest and creaminess from the sour cream and mayonnaise. Make this dressing the day before you want to use it — it tastes better after the flavors have time to marry and develop."

    List of Ingredients

    â—¦ 1 ¾ cups sour cream
    â—¦ 1 cup buttermilk
    â—¦ ½ cup mayonnaise, such as Duke's or Best Foods
    â—¦ 1 cup blue cheese crumbles
    â—¦ Zest and juice from 1 large lemon
    â—¦ 6 to 8 fresh chives, chopped
    â—¦ 1 teaspoon freshly ground black pepper, plus more for seasoning
    â—¦ ½ teaspoon cayenne
    â—¦ Kosher salt

    Recipe

    In a large bowl, whisk the sour cream, buttermilk, and mayonnaise until well incorporated. Whisk in the blue cheese, lemon zest and juice, chives, black pepper, and cayenne.

    Season to taste with salt and additional black pepper.
    Store the dressing in a lidded glass jar in the refrigerator; it will keep for up to 10 days.

    Makes 3 cups
