Creamy Buttermilk Dressing

- 1 lemon
- ½ cup buttermilk
- 1½ cups plain Greek yogurt
- 1 clove garlic, minced
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons finely chopped fresh chives
Instructions
- Grate zest from lemon to equal ½ teaspoon. Cut lemon in half; squeeze juice from lemon to equal 2 tablespoons.
- Whisk together buttermilk and yogurt in a bowl until blended and smooth. Add lemon zest and juice, garlic, salt, pepper, and chives; whisk until blended.
- Transfer to a glass canning jar, and serve immediately. Cover with metal lid, and screw on band; refrigerate up to one week.
