    Creamy Dill Cucumber Salad

    Recipe Introduction

    "Fresh dill is essential to the flavor of this salad; do not substitute dried."

    List of Ingredients

    ◦ 3 cucumbers (2 pounds), peeled, halved lengthwise, seeded, and sliced 1/4-inch thick
    ◦ 1 small red onion, sliced very thin
    ◦ 1 tablespoon salt
    ◦ 1 cup sour cream
    ◦ 3 tablespoons cider vinegar
    ◦ 1 teaspoon sugar
    ◦ 1/4 cup minced fresh dill

    Recipe

    Toss cucumber and onion with salt in colander set over large bowl. Weight cucumbers with gallon-size zipper-lock bag filled with water; drain for 1 to 3 hours. Rinse and pat dry.

    Whisk remaining ingredients together in medium bowl. Add cucumbers and onion; toss to coat.
    Serve chilled.
