Crispy Buttermilk Coleslaw

- 1 lb. red or green cabbage, finely shredded (about 6 cups)
- 1 large carrot, shredded
- 1/2 cup buttermilk
- 2 Tbsp mayonnaise
- 2 Tbsp sour cream
- 3 scallions, thinly sliced
- 1 tsp cider vinegar
- 1/2 tsp sugar
- 1/2 tsp Dijon mustard
- Coarse salt and freshly ground black pepper
Instructions
- Using a large bowl, toss shredded cabbage and carrot together; set aside.
- Using a small bowl, combine buttermilk, mayonnaise, sour cream, scallion, vinegar, sugar and mustard.
- Pour dressing over cabbage; season with salt and pepper and toss to combine. Refrigerate until chilled, about 30 minutes.
Makes about 6 cups.
