    Crispy Buttermilk Coleslaw

    List of Ingredients


    • 1 lb. red or green cabbage, finely shredded (about 6 cups)
    • 1 large carrot, shredded
    • 1/2 cup buttermilk
    • 2 Tbsp mayonnaise
    • 2 Tbsp sour cream
    • 3 scallions, thinly sliced
    • 1 tsp cider vinegar
    • 1/2 tsp sugar
    • 1/2 tsp Dijon mustard
    • Coarse salt and freshly ground black pepper


    Instructions


    1. Using a large bowl, toss shredded cabbage and carrot together; set aside.

    2. Using a small bowl, combine buttermilk, mayonnaise, sour cream, scallion, vinegar, sugar and mustard.

    3. Pour dressing over cabbage; season with salt and pepper and toss to combine. Refrigerate until chilled, about 30 minutes.

      Makes about 6 cups.
