Crispy Creamy Coleslaw

- 1 small head green cabbage, shredded, about 7 cups
- 1 carrot, peeled and grated
- ¼ cup minced onion
- ½ cup mayonnaise
- ½ cup sugar
- 1 tsp dry mustard
- ½ cup distilled white vinegar or white wine vinegar
- ½ tsp salt
- ¼ tsp fresh-ground black pepper, or to taste
Instructions
- Combine the cabbage, carrot, and onion in a large bowl.
- Whisk together the mayonnaise, sugar, and mustard in a small bowl. Whisk in the vinegar, salt and pepper. Pour the dressing over the cabbage mixture and stir gently but thoroughly to combine. Refrigerate for at least one hour or up to six hours.
- Before serving, stir the coleslaw to redistribute the dressing and spoon off any excess watery liquid. Correct the seasonings if necessary and serve.
Makes 8 servings.
