Cucumbers with Sour Cream Dressing

- 5 medium cucumbers, peeled and very thinly sliced
- 2 teaspoons salt
- 1 cup sour cream
- 3 tablespoons cider or red wine vinegar
- 3 tablespoons chopped fresh dill
- 1 teaspoon sugar
- Black pepper
Instructions
- Combine the cucumbers and salt in a strainer and toss with two forks. Set aside to drain for 30 to 60 minutes. Transfer the cucumbers to a medium bowl.
- Mix the sour cream, vinegar, dill, and sugar in a small bowl. Season to taste with pepper.
- Add the dressing to the cucumbers and toss gently with the forks. Serve immediately or hold in the refrigerator for up to 4 hours before serving.
Serves 4 to 6
