    Cucumbers with Sour Cream Dressing

    List of Ingredients


    • 5 medium cucumbers, peeled and very thinly sliced
    • 2 teaspoons salt
    • 1 cup sour cream
    • 3 tablespoons cider or red wine vinegar
    • 3 tablespoons chopped fresh dill
    • 1 teaspoon sugar
    • Black pepper


    Instructions


    1. Combine the cucumbers and salt in a strainer and toss with two forks. Set aside to drain for 30 to 60 minutes. Transfer the cucumbers to a medium bowl.

    2. Mix the sour cream, vinegar, dill, and sugar in a small bowl. Season to taste with pepper.

    3. Add the dressing to the cucumbers and toss gently with the forks. Serve immediately or hold in the refrigerator for up to 4 hours before serving.

      Serves 4 to 6
