"Our family loves to go on picnics. In fact, we have two baskets and three blankets so we can invite friends or family and enjoy an afternoon or evening relaxing on the soft grass while everyone chats and the kids play a little soccer or Frisbee. We've found a few simple, refreshing recipes like this dill salad that are perfect for those picturesque evenings — and even for the evenings when we bring out the squirt guns for an impromptu water fight. Everyone should let their inner child out now and again, right?"
List of Ingredients
â—¦ 2 cups fresh peas
â—¦ 1 English cucumber, sliced
â—¦ 2 cups grape tomatoes, halved
â—¦ 2 teaspoons salt, or to taste
â—¦ Ground black pepper, to taste
â—¦ â…“ cup olive oil
â—¦ 2 teaspoons apple cider vinegar
â—¦ 2 teaspoons balsamic vinegar
â—¦ 2 teaspoons minced garlic
â—¦ 2 teaspoons sugar
â—¦ 2 teaspoons chopped fresh dill
â—¦ 1 dash crushed red pepper
Recipe
In a large bowl, combine peas, cucumbers, and tomatoes. Sprinkle with salt and pepper. Refrigerate for 20 minutes.
In a small bowl, whisk together oil, vinegars, and garlic. Add sugar, and whisk to combine. Pour dressing over veggies.
Sprinkle with dill and red pepper.
Serve immediately, or cover and serve within the hour. The cucumbers will start to pickle if you wait too long.
