List of Ingredients



• 1/2 pineapple, peeled and sliced
  
• 1 mango, peeled and sliced
  
• 1 papaya, peeled and sliced
  
• 1/3 cup olive oil
  
• 1 Tbsp chopped shallots
  
• 1 Tbsp cilantro
  
• 1 Tbsp white wine vinegar
  
• 1/2 red onion, thinly sliced
  
• 1 cup halved cherry tomatoes
  
• 1/2 lb. mixed baby lettuce leaves
  






Instructions



1. Arrange the sliced pineapple, mango, and papaya around the rims of 4 salad plates.
   
   
2. Next, whisk together the olive oil, shallots, cilantro, and white wine vinegar in a large bowl to make a vinaigrette.
   
   
3. Add to vinaigrette 1/2 red onion, cherry tomatoes, and baby lettuce leaves. Using salad spoons, toss well and serve over fruit slices.
   
   Serves 4
