    Good Old Fashioned Potato Salad

    List of Ingredients


    • 6 medium Yukon gold or Yellow Finn potatoes, cut into 1/2-inch pieces
    • 2 tsp salt
    • 2 large eggs
    • 1/2 cup red onion, small dice
    • 2 celery ribs, chopped
    • 3/4 cup mayonnaise
    • 1 Tbsp yellow mustard
    • 1/4 cup sweet pickle relish, drained
    • 1/2 tsp freshly ground pepper


    Instructions


    1. In large saucepan, place potatoes and cold water to cover by 1 inch. Add 1 teaspoon salt and bring to boil over high heat. Reduce to simmer and cook until tender, about 5 minutes. Drain well.

    2. Meanwhile, place eggs in small saucepan with cold water to cover by 1 inch. Bring water to simmer (don't let it boil!) and remove from heat. Cover and let stand 10 minutes. Drain, peel, and coarsely chop eggs.

    3. In large mixing bowl, combine potatoes, eggs, onion and celery; combine. Add remaining ingredients, including remaining teaspoon salt, and gently mix.

      Serve chilled or at room temperature.
