Good Old Fashioned Potato Salad

List of Ingredients
- 6 medium Yukon gold or Yellow Finn potatoes, cut into 1/2-inch pieces
- 2 tsp salt
- 2 large eggs
- 1/2 cup red onion, small dice
- 2 celery ribs, chopped
- 3/4 cup mayonnaise
- 1 Tbsp yellow mustard
- 1/4 cup sweet pickle relish, drained
- 1/2 tsp freshly ground pepper
Instructions
- In large saucepan, place potatoes and cold water to cover by 1 inch. Add 1 teaspoon salt and bring to boil over high heat. Reduce to simmer and cook until tender, about 5 minutes. Drain well.
- Meanwhile, place eggs in small saucepan with cold water to cover by 1 inch. Bring water to simmer (don't let it boil!) and remove from heat. Cover and let stand 10 minutes. Drain, peel, and coarsely chop eggs.
- In large mixing bowl, combine potatoes, eggs, onion and celery; combine. Add remaining ingredients, including remaining teaspoon salt, and gently mix.
Serve chilled or at room temperature.
