Greek Salad with Creamy Feta Dressing

"About six or seven years ago, my friend Suzanne and I made a Greek salad together. We still talk about that salad. Neither one of us can figure out what made it so perfect. We used a really good feta cheese and olives, but perhaps it was the summer tomatoes, or the freshly picked lettuce we got from the farm stand. Whatever it was, it was magic. Recently I tried mixing up my Greek salad game by making a creamy feta dressing instead of just adding feta crumbles. Whoa, Nelly! Success! With a feta dressing, you get feta flavor in every bite, and you don't have to just pick through the salad trying to find the cheese (this is me). Suzanne, this recipe gives our Greek salad of yesteryear a run for its money."

â—¦ ¼ cup extra-virgin olive oil
â—¦ ¼ cup red wine vinegar
â—¦ 1 cup crumbled feta cheese
â—¦ ½ teaspoon dried oregano
â—¦ ½ teaspoon sugar
â—¦ Pinch of kosher salt
â—¦ 2 to 3 romaine lettuce hearts, chopped
â—¦ ¼ cup pitted Kalamata olives, sliced
â—¦ 1 cup grape tomatoes, halved
â—¦ ½ red onion, sliced
â—¦ ¼ cup sliced pepperoncini
Recipe
Put the oil, vinegar, feta, oregano, sugar, and salt in a blender. Blend until very smooth.
Put the lettuce in a large bowl, pour the dressing over, and toss until coated. Transfer to a serving bowl and top with the olives, tomatoes, onion, and pepperoncini. Serve immediately.
